Ingredients

  • 3 tbsp unsweetened cocoa powder
  • 0.25 cup granulated sugar
  • 0.125 tsp fine salt
  • 4 cup whole milk
  • 6 oz semisweet chocolate finely chopped
  • 0.33 cup amaretto
  • 1 tsp vanilla extract

Method

  1. In a medium saucepan, whisk the cocoa powder, sugar, salt, and about 1/2 cup of the milk until smooth.
  2. Whisk in the remaining milk.
  3. Add the chopped chocolate and heat over medium-low heat for 5 to 8 minutes, whisking often, until steaming and the chocolate is fully melted; do not let it boil.
  4. Remove the saucepan from the heat and stir in the amaretto and vanilla extract.
  5. Divide among four mugs and serve hot.

Notes

For the smoothest texture, whisk often and do not let the chocolate boil. Refrigerate leftovers for up to 3 days; freezing is not recommended. For a dairy-free variation, use an unsweetened plant-based milk and dairy-free semisweet chocolate.
