Ingredients

For the centers
  • 36 chocolate sandwich cookies finely crushed
  • 1 block (8 oz) cream cheese softened
For the coating
  • 1 package (16 oz) blue candy melts
  • 2 tbsp blue and white sprinkles

Equipment

  • 1 13x18-inch rimmed baking sheet

Method

Make the centers
  1. Mix the cookie crumbs and cream cheese in a large bowl until evenly combined.
  2. Roll the mixture into 36 balls.
  3. Place the balls on a parchment-lined 13x18-inch rimmed baking sheet.
  4. Refrigerate the balls for 30 minutes, until firm.
Coat the truffles
  1. Melt the candy melts in a microwave-safe bowl at 50% power in 30-second intervals, stirring after each, until smooth.
  2. Dip each chilled ball in the melted candy.
  3. Let the excess coating drip back into the bowl.
  4. Return each ball to the baking sheet.
  5. Add sprinkles before the coating sets.
  6. Refrigerate the truffles for 20 minutes, until the coating is firm.

Notes

For neat, even coating, let excess candy melt drip off each truffle before returning it to the sheet. Store covered in the refrigerator for up to 5 days; these truffles can be frozen. For a dairy-free variation, use dairy-free sandwich cookies, cream cheese, and candy melts.
