Ingredients

For the chicken
  • 1 jar (16 oz) salsa
  • 0.5 cup chicken broth
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 2 lb chicken thighs boneless, skinless, thawed
  • 1 can (15 oz) black beans drained and rinsed
  • 1 cup corn frozen
For the rice
  • 4 cups water
  • 2 cups long-grain white rice
For serving
  • 1 cup cheddar cheese shredded
  • 1 avocado diced
  • 0.25 cup fresh cilantro chopped
  • 1 lime cut into wedges

Equipment

  • 1 6-quart slow cooker
  • 1 3-quart saucepan

Method

Make the chicken
  1. Stir the salsa, chicken broth, chili powder, cumin, garlic powder, and salt together in a 6-quart slow cooker.
  2. Nestle the thawed chicken into the salsa mixture.
  3. Cover and cook on LOW for 5 to 6 hours or HIGH for 3 to 4 hours, until the thickest part of the chicken reaches 165°F and the chicken shreds easily.
  4. Shred the chicken in the slow cooker, then stir in the black beans and frozen corn.
  5. Cook on HIGH for 15 to 20 minutes, until heated through.
Cook the rice
  1. Bring the water to a boil in a 3-quart saucepan.
  2. Stir in the rice, cover, and reduce the heat to low.
  3. Simmer for 18 minutes.
  4. Remove the saucepan from the heat and let the rice rest, covered, for 10 minutes.
  5. Fluff the rice with a fork.
Assemble the bowls
  1. Divide the rice among six bowls.
  2. Top with the chicken mixture, cheddar, avocado, and cilantro, and serve with lime wedges.

Notes

For easy shredding, cook the chicken until it shreds easily before adding the beans and corn. Refrigerate leftovers for 3 to 4 days; the chicken mixture can be frozen. For a dairy-free bowl, omit the cheddar or use dairy-free cheddar.
