Espresso chocolate chip cookies bake up with golden edges, soft centers, and semisweet chocolate in every bite. Instant espresso powder adds a subtle coffee note, and a 30-minute chill helps the dough hold its shape.

Ingredients

  • 1 cup butter unsalted, softened
  • 1 cup brown sugar packed, light
  • 0.5 cup granulated sugar
  • 1 egg large, at room temperature
  • 1 egg yolk large, at room temperature
  • 2 tsp vanilla extract
  • 2.25 cup all-purpose flour
  • 2 tsp instant espresso powder
  • 1 tsp baking soda
  • 0.75 tsp table salt
  • 2 cup chocolate chips semisweet

Equipment

  • 1 electric mixer
  • 2 baking sheets

Method

  1. In a large bowl, beat the butter, brown sugar, and granulated sugar with an electric mixer on medium speed until creamy, about 2 minutes.
  2. Beat in the egg, egg yolk, and vanilla until combined, scraping down the bowl as needed.
  3. In a separate bowl, whisk together the flour, espresso powder, baking soda, and salt.
  4. Add the flour mixture to the butter mixture and mix on low just until no dry flour remains.
  5. Stir in the chocolate chips.
  6. Cover the bowl and refrigerate the dough for 30 minutes.
  7. Heat the oven to 350°F.
  8. Line two baking sheets with parchment paper.
  9. Scoop rounded tablespoons of dough onto the prepared sheets, spacing them about 2 inches apart.
  10. Bake for 10–12 minutes, until the edges are golden and the centers still look slightly soft.
  11. Let the cookies cool on the baking sheets for 5 minutes.
  12. Transfer the cookies to a wire rack to cool completely.

Notes

For pronounced coffee flavor, measure the instant espresso powder carefully. Store cookies in the refrigerator for up to 5 days; freeze baked cookies for up to 3 months. For a dairy-free variation, use dairy-free butter and semisweet chocolate chips.
