Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.25 tsp baking soda
  • 0.5 tsp fine salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 1 egg large
  • 2 tsp vanilla extract
  • 0.5 cup rainbow jimmies

Equipment

  • 1 electric mixer
  • 1 baking sheet

Method

  1. Whisk the all-purpose flour, baking powder, baking soda, and fine salt together in a medium bowl.
  2. Beat the softened unsalted butter and granulated sugar in a large bowl with an electric mixer on medium speed until creamy, about 2 minutes.
  3. Beat in the large egg and vanilla extract until combined, scraping down the bowl as needed.
  4. Mix in the flour mixture on low speed just until no dry streaks remain, then fold in the rainbow jimmies.
  5. Cover the dough and refrigerate for 30 minutes.
  6. Heat the oven to 350°F and line a baking sheet with parchment paper.
  7. Scoop the dough into 2-tablespoon portions and place them about 2 inches apart on the baking sheet; bake in batches for 10 to 12 minutes, until the edges are set and the centers look just set.
  8. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack; let the sheet cool before baking the next batch.

Notes

For soft centers, remove the cookies when the edges are set and the centers look just set. Store in an airtight container at room temperature for up to 4 days; freeze baked cookies for up to 2 months. For a dairy-free option, use a plant-based butter substitute.
