Method
- Heat the oven to 400°F.
- Line two 18x13-inch rimmed baking sheets with parchment paper.
- In a medium bowl, mix the cream cheese, cheddar, bacon, jalapeños, and garlic powder until evenly combined.
- On a lightly floured surface, unfold one sheet of puff pastry and spread half the filling evenly over it, leaving a 1/2-inch border along one edge.
- Starting at the opposite edge, roll the pastry into a snug log and press the unfilled edge to seal; repeat with the second pastry sheet and remaining filling.
- Refrigerate the logs for 20 minutes.
- Beat the egg with the water in a small bowl.
- Cut each log crosswise into 1/2-inch slices and arrange them cut side up on the prepared baking sheets, leaving about 2 inches between them.
- Brush the pastry lightly with the egg wash.
- Bake for 15 to 18 minutes, switching the pans between oven racks halfway through, until the pastry is puffed and golden brown.
- Let the pinwheels rest on the pans for 5 minutes before serving.
Notes
For neat slices, keep the pastry logs cold before cutting. Store leftovers in the refrigerator for up to 3 days; freeze baked pinwheels for up to 2 months. For a gluten-free option, use gluten-free puff pastry.
