Ingredients

For the salmon
  • 1 tbsp olive oil for greasing the baking dish
  • 4 salmon fillets 6-ounce, skin-on, pin bones removed
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1 cup pineapple fresh chunks
For the glaze
  • 0.25 cup pineapple juice
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp light brown sugar packed
  • 1 cloves garlic minced

Equipment

  • 1 9x13-inch baking dish

Method

Prepare the salmon
  1. Heat the oven to 400°F.
  2. Lightly grease a 9x13-inch baking dish with the olive oil.
  3. Arrange the salmon skin-side down in the dish.
  4. Season the salmon with the salt and pepper.
  5. Scatter the pineapple chunks around the fillets.
Make and bake the glaze
  1. Whisk the pineapple juice, soy sauce, brown sugar, and garlic in a small bowl.
  2. Pour the glaze over the salmon and pineapple.
  3. Bake for 12 to 16 minutes, until the thickest part of each fillet reaches 145°F and flakes easily with a fork.
  4. Rest for 3 minutes before serving.

Notes

For best results, check the thickest fillet for doneness at 12 minutes. Refrigerate leftovers in an airtight container for up to 3 days; freezing is not recommended for best texture. Use tamari instead of soy sauce for a gluten-free option.
